6 beef empanadas
Instructions:
- Allow empanadas to thaw slightly on the counter for about 30 minutes. Empanadas should still be firm but should have enough softness to slice with a knife.
- Using a sharp knife, slice empanadas into 8-10 pieces each. It is all right if some of the pieces are not perfect. They will still make nice, crispy chips.
- Air fry the empanada chips in two batches at 390 ˚F. For each batch, arrange the empanada slices in a single layer as much as possible. There may be some overlap depending on the size of the air fryer. For a single layer, air fry for 10-11 minutes. For a double layer, air fry for 13-14 minutes.
- Place in a bowl and keep aside until ready to serve.

Ingredients:
2 avocados
¼ cup white or yellow onion, diced
1 jalapeño, diced
1 Roma tomato, diced

- Dice onion, jalapeño, tomato. Chop cilantro. Juice lime.
- Add avocado flesh to a medium bowl and mash until smooth.

4 oz White American cheese, cut into smaller pieces
¼ cup milk
½ tsp ground cumin
½ tsp chili powder
4 oz fire roasted diced green chilis
1 Roma tomato, diced
Optional garnishes: chopped cilantro, diced tomato, diced red onion
Instructions:
- Dice onion and tomato. Mince garlic.
- Heat butter in a small pot over medium heat.
- Add onion and garlic. Cook for 3-5 minutes or until softened, stirring occasionally to prevent burning.
- Add milk and cheese. Reduce heat to low and stir until all the cheese melts and forms a uniform consistency. If you prefer a thinner queso, stir in more milk (1-2 tbsp at a time) to reach the desired consistency.
- Add cumin, chili powder, diced green chilis, and tomato. Stir to combine.
- Top with desired garnishes and serve immediately along with the empanada chips and guacamole.
Notes:
- Cheese: For the best results, do not use pre-shredded cheese. The added anti-coagulation agents in shredded cheese will prevent the queso from keeping a smooth, melty texture. White American cheese can be purchased from the deli counter at your local grocery store.
